After completing a degree in Science, Kirwin moved straight into local government as a health inspector with councils in both Australia and the United Kingdom. It is here that Kirwin started enforcing food safety standards within food businesses. This included prosecutions of businesses that were not compliant in relation to the local food safety legislation.

During his time in the United Kingdom, Kirwin also worked for a private food safety consultancy called Hygiene Monitoring Services (HMS), which was based in England. In 1996, after working up to the role of Training and Development Director, Kirwin left England and returned to Sydney, Australia where he set up The Environmental Health Consultancy (EHC).

Kirwin has over 25 years experience and practical expertise in food safety worldwide which includes the development of food safety programs, undertaking food safety audits including HACCP and ISO 22000 developing and facilitating food safety training courses, involvement with committees that develop food safety standards on behalf of government bodies, acting as an expert witness for businesses that required assistance and investigating allegations of food poisoning.

EHC is now one of the best known and respected food safety companies in Asia Pacific region with offices both in Sydney and Shanghai.
